Chickpea Rogan Josh

Ingredients  for  Rogan  Josh  Paste  :

2 cloves of garlic

1 thumb-sized piece of fresh root ginger

1 /4  cup of roasted peppers, from a jar

1 tablespoon paprika

1 teaspoon smoked paprika

2 teaspoons garam masala

1 teaspoon fresh  turmeric (peeled)

½ teaspoon sea salt

2 tablespoons  vegetable oil

2 tablespoons tomato purée

1 fresh red chili

A small bunch of fresh coriander

2 teaspoons cumin seeds

2 teaspoons coriander seeds

1 teaspoon black peppercorns

Combine  the ingredients in a food processor  and use for a  Rogan  Josh Chickpeas recipes.

Ingredients for a Chickpeas Rogan Josh :

3 tablespoon oil

1 can ( 540 ml )chickpeas

5 tablespoon  Rogan Josh paste

1 large onion – peel and slice finely

2 cloves garlic – crush

1 fresh chilli – deseed and slice finely

1  teaspoon   fresh grated turmeric

Method:

Heat the  oil in a large pan on medium to high heat. Add the onions and sauté for 4-5 minutes until translucent. Then add the chickpeas (including the liquid), garlic, chilli,turmeric and ¾ of the coriander (reserving a little for the final garnish). Now add the Rogan Josh paste and salt and pepper to taste. Check the sauce and add a little more water if you’d like more sauce. Stir well and cook for about 8-10 minutes or until the chicpeas  is soft. Remove from stove and keep warm. Serve with  natural yogurt, sliced red onion, fresh cilantro or  mint  and  warm Naan bread.

For  Serve:

6 cup saffron  rice

6 small Naan bread

1/2 cup natur yogurt

1/4 cup fresh  coriander or mint – chop coarsely

1 red onion  sliced
