Double Layer Tacos

1 lb veggie ground

2  tbsp oil

2 tbsp taco seasoning mix

8 flour tortillas for soft tacos

1/2 can (16 oz) refried beans

1 cup shredded Monterey Jack cheese

3/4 cup  salsa

1 1/2 cups shredded lettuce

1/2 red onion diced

1 jalapeno pepper sliced

1 tomato dices

1 avocado( optional)

1 lime

4 tbsp lemon-garlic aioli



In 10-inch skillet  heat the oil  and cook  veggie ground over medium-high heat 5 to 7 minutes, stirring occasionally.Add a taco seasoning mix and cook  until brown . Set aside.

Spread 2 tablespoons  refried beans and some shredded Monterey Jack cheese  on each flour tortilla. Place 2 tortillas  together and  warm up on each side on a nonstick skillet.Form each double side tortilla to a  taco form.

Toss  some salad  to  a bottom of each folded tortillas  and  put   2 tablespoons  veggie ground mixture  on the top.Top with salsa, onion, sliced jalapeno peppers,tomato dices  and cheese. Sprinkle  some lemon-garlic  aioli. Serve immediately.
