Fajitas

Ingredients for a Fajita Seasoning Mix :

I like to add a little smoked paprika, but if you don’t have any, don’t worry your mix will still be delicious!

3 Tbsp cornstarch

2 Tbsp chili powder

1 Tbsp salt

1 Tbsp paprika

1 Tbsp sugar

1-1/2 ts. onion powder

½ tsp garlic powder

½ tsp smoked paprika

½ tsp cumin

⅛ tsp crushed red pepper flakes

Pinch of cayenne pepper (optional)

Ingredients for  a Fajitas :

6 flour tortillas

200 g meatless chicken strips

3 Tbsp Fajita Seasoning Mix

3 red, yellow pepper

2 large onion

2Tbsp oil

Instructions:

Combine all of the ingredients in a small bowl.
Pour into small glass or plastic container, seal tightly and store in a cool, dry place.
Makes the equivalent of 3 packets of commercial or purchased Fajita Seasoning Mix.
Use three tablespoons per 1 lb of meatless chicken strips  or veggies.If grilling, rub mix on meatless chicken strips  and let set (covered) in fridge for 1-3 hours. (you can also squeeze a little lime juice and olive oil on them before rubbing with seasoning) and bake  at 350 degrees.
Then I saute peppers and onions on the stove top with a little more seasoning until tender and mix them together with the meatless  chicken strips . You can serve  serve them in flour tortillas with , guacamole, cheese, lettuce, black beans and pico de gallo .
