Red Curry Skewers

4 wooden skewers

1/2 pck beefless tips

1/4 cup olive oil

2 garlic cloves

3 tsp red curry paste

salt, ground  pepper

1 yellow pepper ( cored, seeded and cut into 1.5″ pieces)

1 red onion quartered

1 cup cherry tomato

1 cup cremini mushrooms  ( cut in half)



Soak skewers for 15 minutes.

Puree  olive  oil, garlic, red curry paste , salt and pepper  in a food processor and set aside.

Thread beefless tips and  vegetables  on each skewer, alternating.

Coat grill rack with oil. Heat grill to medium high heat and cook skewers until the vegetables are caramelized and hot, while brushing both with red curry paste  sauce, approximately 5-7 minutes. Serve with  couscous and  greens.
