Rosted Vegetables in Parchment Paper

3 cup brussel sprouts
6 baby carrots
1 cup mini  red onion
2 cup Shiitake mushrooms
2 green zucchini
1 yellow zucchini
2 tbsp tyme
2 tbsp chopped fresh rosemary
2 tbsp chopped fresh sage
6 garlic cloves
4 tbsp olive oil ,salt ,pepper

2  sheet parchment paper


Wash and  slice vegetables (if you needed). Place in a large bowl and toss vegetables with salt, pepper,  and fresh herbs.Drizzle with olive oil.

Preheat oven to 400 degrees. Cut off 2 large piece of parchment paper and place vegetable  in the center of the sheet. Fold into and twist end of parchment paper to seal.
Place packet on a rimmed baking sheet and bake until packet is puffed up,  about 45-50 minutes.

Serve immediately with cooked rice.
