Vegetarian Frankfurter Soup
Inspite of the German name of this soup, this is the one of the most popular soup in Hungary , where I came from . Kind of thick sour cream make this dish more special. There is one more secret to tell the marjoram makes the soup simply irresistible.
4 tbsp oil
1 large onion ,diced
3 garlic cloves ,minced
2 tsp caraway seed
2 tsp marjoram
2 tsp Hungarian paprica
1.5 liter low sodium vegetable stock
half of a saveur cabbage, chopped
4 medium potatoes, chopped
Salt, pepper to taste
Heat the oil in a pan and gently sauté the onion for 2 minutes.
Add garlic, caraway seed, marjoram, paprika , salt and pepper and cook for 2 minutes.Add saveur cabbage, potato and the vegetable stock and cook for another 15 minutes,stirring occasionally. Serve hot with sour cream.
