Zucchini – Leek and Goat Cheese Pizza



300 g  pizza dough ( 1 medium )

2 garlic cloves  smashed with a little   olive oil

2 cup mozzarella cheese shredded

1 leek sliced thinly

1 cup goat cheese, at room temperature

2 tbsp fresh  rosemary

1 medium yellow zucchini, sliced thinly

Drizzle of olive oil

Salt and pepper to taste


Preheat the oven to 450F degrees. Roll your pizza dough into a rectangular shape and lay it on a tray or stone that has been dusted lightly with cornmeal or put on a parchment  paper.

Spread   the pizza dough with the garlic-olive oil spread  and drizzle with mozzarella cheese .
Arrange the zucchini coins in concentric circles over the mozzarella cheese , overlapping them ,then add the  sliced leek. Drizzle with olive oil and finish with  salt , freshly ground black pepper and fresh rosemary.Finish the top with the  crumble  goat cheese.
Bake in preheated oven for 10 to 15 minutes, or until the edges of your pizza are golden brown and the zucchini looks roasted and a little curled up at the edges.
Transfer to plate, slice it up .Eat  on warm  or room temperature.
